We source and provision our shop with a strong set of criteria. The tenants of this philosophy will sometimes all add up to near perfection and other times it gets very close. The things we look for on our meat is if the animals are humanely treated, on the pasture and beyond. This is the largest one for us. Meat is good and we want to remove the ethics argument off the table. We like well raised food with a sustainable and simple method of production. We like local farmers that we and our customers could visit. We like craftsmen like ourselves. And we love family. Eating around a table with family and friends, a family that has had a farm for generations, and a work family that is a joy to see everyday.
